GT BEANS held an Aroma Concert in cooperation with SCAK on November 14, 2011,
inviting Frederic Zantman, an aroma expert from Le Ne du Vin in France.
It was an opportunity for attendees to understand the process of making the aroma kit and how to detail, refine,
and sense the aroma, as well as to answer the questions that they had regarding the aroma kit.
Le Nez du Vin, who created the aroma kit, was originally a wine aroma developer based in France.
While researching the aromas of wine, the company realized that coffee and wine had many things in common.
This led to the company’s creation of the Coffee Aroma Kit.
The researchers tasted more than 1,500 types of coffee and categorized more than 1,000 aromas into seven notes,
from the most delicate aroma (e.g. butter aroma) to the strongest aroma (e.g. carbon-like aroma).
They then formed a total of 36 aromas from these seven notes.
These seven notes are like the “Do Re Mi Fa Sol La Ti” used in music to produce a beautiful tune in various combinations.
The seminar room was filled with a passionate audience who showed strong curiosity about the aroma kit.
The process of identifying the coffee aroma involves chewing the beans,
drinking coffee, and tasting it in the mouth with the tongue.
The process is very similar to wine tasting,
and is intended to allow optimal sensing of the aroma.
As Mr. Zantman explained the coffee aroma while seated in the center of the seminar room,
he talked about how he felt like he was talking to an old man next to
him in a small village in Ethiopia while sitting in a plane.
The moment when a magical image comes to mind is the magic that the aroma brings out.
While the exciting aroma seminar was in progress, GT BEANS decided to give away
the Coffee Aroma Kit 36 to some members of the audience.
